Brake shoes normally come as a set of 4 unless for the handbrake that is located on the tail shaft when there is 2.

The brake shoes do NOT normally come with any pins or levers unless they are of a non removal type.
Brake shoes in 98% of cases only come in one thickness (standard) but there are a few in oversize. The oversize shoes normally only fit brake drums that have been machined.
There are no varying types of compounds like disc pads do. By carrying out regular inspections of the brake shoes, you will normally find when they need replacing prior to them being metal to metal with the brake drum.
Brake shoes can be radius ground to match the shoe to the drum, ie have the full face of the shoe touching the drum surface.
